Strawberry Almond Oat Bars
Ingredients

- 1 Cup Rolled Oats
- 1/2 cup of The Almond Farmer’s Almond Meal
- ½ cup All Purpose flour
- 1/4 cup of Coconut Sugar
- ¼ cup of Sweetener (Honey, Rice Malt Syrup or Maple Syrup)
- 1 teaspoon of ground cinnamon or Ginger is another lovely option

- Pinch of salt
- 6 tbsp unsalted butter (or can substitute coconut oil)
- 2 Cups of Strawberries
- 2 Tbsp of Lemon Juice
- 1 tsp of cornstarch
- 1 Tbsp of extra sugar for sprinkling on top

Method
Preheat oven to 180 degrees. Line the bottom of an 8×8 inch square pan with paper or grease pan with extra butter or oil. To make the crust and crumble combine the flour, sugar, almond meal, oats, cinnamon and salt in a large bowl and add melted butter & honey. Mix until combined (should be a bit crumbly). Remove 1 cup of the mixture and set aside. This will be your crumble. Add remaining crumble mixture to the pan and using your fingers press the mixture into the pan creating an even layer of base crumble.
In a small bowl combine strawberries and lemon juice and then spread out on top of the crumble mixture. Sprinkle cornstach and sugar over the top of the strawberry mixture. Take remaining cup of crumble and spread evenly on top of the strawberry layer.
Bake for 25-30 mins until the crumble looks golden. Allow to cool completely before cutting into bars.
