Raw Caramel Slice
Ingredients
BASE
- 1 Cups of The Almond Farmer’s Almond Meal
- ½ cup of Oats (can leave this out and sub in another nut if Paleo)
- ½ Cup coconut
- 10 -12 soaked dates
- ¼ cup of coconut oil (liquid so can solidify)
DATE CARAMEL FILLING – middle layer
- 1-2 cups of dates soaked in boiling water
- 1 tsp Vanilla essence
- 1 Tbsp Honey or Maple syrup (could also use rice malt syrup)
- 1 Tbsp of The Almond Farmers 100% Pure Almond Butter
- 1 Tbsp of Tahini
- 1 Tbsp coconut oil
CHOCOLATE – Top Layer
- ½ Cup of coconut oil
- 2 Tbsp of Cocoa
- ¼ cup of Honey, maple or rice malt syrup
- 1 or 2 dates
- 1 Tbsp of The Almond Farmers Chocolate Almond Butter
Method
Bring all base ingredients together in a food processor and press into a lined 8x8inch square pan. Place in freezer while you prepare next layer.
Put all caramel filing ingredients into the processor and blend until smooth. Remove base from freezer and spread caramel filling evenly over the base. Return to freezer once this stage is complete.
Put all Chocolate ingredients into the processor and blend until smooth. Remove base and filling from freezer and spread chocolate filling evenly over the caramel, working quickly before it sets hard. Return to freezer for half hour or so. Take out of Freezer and cut into slices or squares with a hot knife. Store in an airtight container in the freezer. Remove from freezer only a few mins before serving.
