Note – If you don’t like oatmeal or pepitas then sub them out and replace with another seed etc.
Line a mini or standard cupcake tray with patty pans or use a silicone cupcake mould so you can pop out your cups!
Mix all ingredients except the Chocolate in a bowl. Get your hands in there to help the mixture bind faster.
Use a tiny spoon to place even spoonful’s into tiny cupcake tray. If your using a standard cupcake tray then use a dessert spoonful instead.
Press down on the mixture and pop into the fridge or freezer while you melt your chocolate.
Top each cup with a spoonful of chocolate.
If you want to get clever and decorate your cups (do this straight after topping with your chocolate before it sets) you can sprinkle with hemp seeds, top with a beautiful roasted almond or even a raspberry to make these truly impressive!
